{"id":39,"date":"2016-10-05T08:28:41","date_gmt":"2016-10-05T08:28:41","guid":{"rendered":"http:\/\/localhost\/Themegrill\/wordpress_flash\/?p=39"},"modified":"2020-03-26T20:01:46","modified_gmt":"2020-03-26T19:01:46","slug":"tea-time","status":"publish","type":"post","link":"https:\/\/latinaja.es\/index.php\/2016\/10\/05\/tea-time\/","title":{"rendered":"Risotto de champi\u00f1ones y jam\u00f3n"},"content":{"rendered":"\n<p>Arroz, jam\u00f3n, champi\u00f1ones, un buen caldo, queso\u2026 Si ten\u00e9is estos ingredientes, podr\u00e9is cocinar un delicioso risotto, tan sencillo de hacer como cualquier arroz, s\u00f3lo hay que tener en cuenta algunos detalles de la t\u00e9cnica para obtener un risotto&nbsp;<a href=\"https:\/\/gastronomiaycia.republica.com\/2020\/02\/16\/12-recetas-de-arroz-meloso-deliciosas-originales-y-faciles-de-cocinar\/\">meloso<\/a>&nbsp;y brillante. As\u00ed que vamos con la receta de este&nbsp;<strong>Risotto de champi\u00f1ones y jam\u00f3n serrano<\/strong>, y recordad que si en estos d\u00edas de cuarentena en los que hay que intentar solventar las comidas con lo que se tiene en la nevera y en la despensa, se hace necesario hacer alg\u00fan cambio de ingredientes, no hay problema.<\/p>\n\n\n\n<p>De acuerdo que, si se utiliza un&nbsp;<strong>arroz especial para risotto<\/strong>, como es el arborio, el carnaroli, el vialone nano\u2026 el resultado es magn\u00edfico, pero si en la despensa s\u00f3lo ten\u00e9is arroz bomba u otro de grano redondo, tambi\u00e9n os saldr\u00e1 un arroz con muy buen sabor, aunque no alcance la melosidad del risotto. Si en lugar de champi\u00f1ones ten\u00e9is otras setas, pues se pueden sustituir, y tambi\u00e9n por cualquier otra verdura, como unas alcachofas. Y lo mismo con el queso, un buen queso de vaca o de oveja nacional servir\u00e1 para conseguir un arroz meloso y sabroso. As\u00ed que, si quer\u00e9is hacer una rica comida con pocos ingredientes, aqu\u00ed ten\u00e9is este&nbsp;<strong>Risotto de champi\u00f1ones y jam\u00f3n, la receta m\u00e1s f\u00e1cil para hacer un buen risotto en casa<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientes (4 comensales)<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>100 gramos de jam\u00f3n serrano en lonchas<\/li><li>1 cebolla de Figueres o cebolla blanca dulce<\/li><li>350 gramos de champi\u00f1ones<\/li><li>1 c\/s de hierbas provenzales<\/li><li>c\/n de pimienta negra reci\u00e9n molida<\/li><li>260 gramos de arroz&nbsp;<a href=\"https:\/\/gastronomiaycia.republica.com\/2009\/08\/02\/arroz-arborio\/\">arborio<\/a><\/li><li>200 gramos de vino blanco<\/li><li>900 gramos de caldo de pollo o de jam\u00f3n<\/li><li>80 gramos de grana padano o parmesano<\/li><li>c\/n de aceite de oliva virgen extra<\/li><li>c\/n de sal (opcional).<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Elaboraci\u00f3n<\/h2>\n\n\n\n<p>Corta las lonchas de jam\u00f3n en trozos de tama\u00f1o regular. Pela la cebolla y p\u00edcala en brunoise. Limpia los champi\u00f1ones, corta la base del pie (no el pie entero) y troc\u00e9alos en cuartos o en octavos, seg\u00fan lo grandes que sean. Pon a calentar el caldo en un cazo o en una jarra en el microondas.<\/p>\n\n\n\n<p>Pon la cazuela a calentar con un chorrito de aceite de oliva virgen extra y el jam\u00f3n serrano, deja que el jam\u00f3n suelte su grasa y que se cocine hasta estar un poco crujiente, entonces, ret\u00edralo escurri\u00e9ndolo del aceite.<\/p>\n\n\n\n<p>Si es necesario, a\u00f1ade un poco m\u00e1s de aceite a la cazuela, ponla a fuego suave y a\u00f1ade la cebolla picada, p\u00f3chala y a continuaci\u00f3n a\u00f1ade los champi\u00f1ones, sube el fuego y rehoga un par de minutos, incorpora el arroz y contin\u00faa cocinando para&nbsp;<a href=\"https:\/\/gastronomiaycia.republica.com\/2014\/05\/13\/que-significa-nacarar-en-cocina\/\">nacararlo<\/a>, condimenta con las hierbas provenzales, la pimienta negra reci\u00e9n molida y moja con el vino blanco<\/p>\n\n\n\n<p>Deja que el vino se consuma y empieza a a\u00f1adir el caldo poco a poco, vierte un cuchar\u00f3n y remueve el arroz hasta que se absorba (puedes ir dejando de remover de vez en cuando), una vez que el arroz se haya quedado seco, a\u00f1ade otro cuchar\u00f3n y as\u00ed hasta terminarlo.<\/p>\n\n\n\n<p>Cuando a\u00f1adas el \u00faltimo cuchar\u00f3n de caldo, incorpora tambi\u00e9n el queso reci\u00e9n rallado y la mitad del jam\u00f3n serrano reservado. Mezcla bien y cuando obtengas un arroz muy meloso y a\u00fan con un poquito de caldo, procede a servir, pues el risotto sigue absorbiendo caldo hasta llevarlo a la mesa.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Acabado y presentaci\u00f3n<\/h2>\n\n\n\n<p>Sirve el&nbsp;<strong>risotto<\/strong>&nbsp;de&nbsp;<strong>champi\u00f1ones y jam\u00f3n serrano<\/strong>&nbsp;terminando con unas lascas de queso y repartiendo el resto del jam\u00f3n crujiente.
